The research group in science, technology, and industrial innovation aims to generate new knowledge for technological development and innovation in the food and beverage industry, applying new processing, preservation, and raw material techniques for implementation in processes, systems, or services to substantially modernize those already produced or installed.
Technological innovation research is a systematic creative process aimed at experimenting with and introducing to the market a product (good or service) or production process that is technologically new or has qualities characterizing a significant improvement (incremental innovation) of existing products and processes.
