N2 - The objective of this research work was to elaborate and evaluate the acceptability of a filter infusion of germinated purple corn (Zea maysL.), lemonverbena (Aloysia citrodora) and moringa (Moringa oleifera); The investigation had four phases, the first, a marketstudy, as a second phase, a design of the process, third phase, the elaboration processand finally, the validationand optimization of the product. For the marketstudy, the populationwas 425, 367 inhabitantsand the sample wasmade up of 375 citizens of the city of Chimbote, Ancash-Peru. For the design of the process, a detailed process analysis diagram (DAP) was made. For the validation of the product, an experimental design of mixtures was used, with 10 formulations, evaluating attributes such as smell, color, flavor and appearance of the product, selecting an optimal formulation based onsaid attributes; The optimized formulation underwent a physicochemicaland microbiologicalevaluation. Concludingthat 98% of those surveyed would buy the product; In addition, the manufacturing process requires 47 activities (22 operations, 20 inspections, 4 transportation, 0 waiting, 1 storage); In addition, the optimal formulation for the filter was 45% germinated purple corn, 30% lemon verbena and 25% moringa.
